Craft:
Western Schley pecan trees produce a heavy fruit (nut) replete with healthy pecan oil, which is largely responsible for its rich flavor. Extremely high in protein, these nuts are harvested in late fall and have a light golden color. Del Valle works with 13 small, certified organic pecan farms in the fertile, irrigated land along the Rio Grande River - a location known to produce some of the finest nut kernels available. Supported by a strong New Mexico Department of Agriculture Organic Program, arid climate, and good populations of beneficial insects, Del Valle and their network of farms adhere to the strictest organic production farming practices.
